Lemon Glazed Cookies

We’re ready for spring! These cookies are a burst of sunshine and fresh lemon! Enjoy these cookies with an afternoon cup of tea. Enjoy!


  • 3/4 cup softened unsalted butter
  • 3/4 cup granulated sugar
  • 2 large organic egg yolks
  • 1/2 teaspoon good quality vanilla
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup powdered icing sugar
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon grated lemon zest


  1. Beat butter and granulated sugar until light and fluffy
  2. Add egg yolks, vanilla, and salt and beat to combine ingredients
  3. Gradually add the flour, mixing until just incorporated
  4. Divide the dough in half and roll into 1 1/4-inch-diameter logs
  5. Wrap each roll individually in wax paper and refrigerate until firm, about 30 minutes
  6. Heat oven to 350°
  7. Slice the logs and space them 1 1/2 inches apart on parchment lined baking sheets
  8. Bake until lightly golden – around 16 to 20 minutes
  9. Let the cookies cool on the baking sheets for about 5 minutes
  10. Transfer to cooling racks to cool completely
  11. In a small mixing bowl whisk together the powdered icing sugar, lemon juice and zest- it should be a thick drizzle-able consistency
  12. Drizzle the sugar and lemon glaze over the cookies. Allow them to sit for 15 minutes for the glaze to settle.
